Essence Making Year
We commence our essence making in January when the almond trees cover the hillsides with clouds of pink and white blossom, a spectacular
sight hailing the returning Spring. This essence is excellent for remaining calm and centred when chaos is all around you.
At this time of year the land is lush and green with fronds of new fennel shoots pushing up through the soil. By mid February the air is
perfumed with the scent of Azahar (orange blossom).
This is one of our favourite essences and one of the few that actually taste too!
As spring progresses the days become longer and hotter the countryside is a multicoloured delight for the senses. The olive groves are awash
with red poppies and purple bugloss and we become busy watching the weather, sourcing new sites, running our residential courses and
making our range of essences.
By July the poppies, pimpernels and many other flowers have already seeded, the earth is parched and the landscape has changed to golden
browns and bronze, rhythm of the days becomes slower in the intense heat. There is still bougainvillea, morning glory and lantana to be made,
but this is a time for reflection, relaxation and lazy days by the sea.
As the autumn approaches we are ready for our second spring, as the welcome rains arrive many plants are revitalised and the land becomes
green once again. It is time to head (well prepared for the rapid weather changes) into the mountains for the alpine flowers which now
start to come into bloom.
As the year winds down to it's end, the valley is filled with the aroma of olive wood fires and the days are short, almost time for
the almond blossom again.
